
Loaded with roasted mushrooms and onion rings, then piled high in a soft sesame seed bun and drizzled with aioli and guacamole. This indulgent vegan burger is a taste sensation.
Ingredients
- 2 Quorn Ultimate Burger (227g)
Roasted Mushrooms:
- 100g chestnut mushrooms, sliced
- 1 tbsp olive oil
- 1 tsp finely chopped fresh thyme
- 1/4 tsp each salt and pepper
Vegan Aioli:
- 2 tbsp vegan mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp agave nectar
- 1 small garlic clove, minced
- Pinch each salt, pepper and smoked paprika
Assembly:
- 2 sesame seed buns, split and toasted
- 10g rocket
- 4 thick tomato slices
- 4 tbsp guacamole
Method
- Preheat the oven to 220°C / Fan 200°C / Gas 7. Prepare Quorn Ultimate Burgers according to package directions, along with onion rings.
- To make the roasted mushrooms, toss the mushrooms with the oil, thyme, salt and pepper. Arrange in single layer on parchment paper-lined baking tray. Bake in the same oven as the onion rings for 15 minutes or until golden brown and tender.
- To make the vegan aioli, mix together the vegan mayonnaise, mustard oil, honey, garlic, salt, pepper and smoked paprika until blended.
- Serve the burgers in buns with the rocket, tomato, guacamole, aioli, mushrooms and onions rings.
