Quorn Vegan Nasi Goreng

  • 1 cup Quorn Vegan Pieces
  • 2 cups long-grain rice
  • 1 red onion, finely chopped
  • 1 red pepper, finely chopped
  • 1 baby courgette, finely chopped
  • 1 carrot, finely chopped
  • Handful Toasted Cashew Nuts
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • For the sambal:
  • 3 red chillis
  • 3 garlic cloves
  • 1 tbsp tomato puree
  • 1 tbsp lemongrass paste
  • 2 tbsp sesame oil
  • 1 tsp sea salt
  • Juice & zest of 1 lemon
  • To serve:
  • 2-3 spring onions, sliced
  • Handful of chopped coriander
  • Sesame seeds


  1. Cook your rice according to the packet instructions
  2. Add all the sambal ingredients to a blender and blitz until it forms a smooth paste
  3. Heat a wok over a high heat then add 4 tbsp of the sambal. Cook for a minute or so, stirring often.
  4. Add the vegetables and Quorn Vegan Pieces & wok fry for 5-6 minutes
  5. When your rice is cooked, drain away the water and add to the wok. Stir fry for 3-4 minutes. Be sure to scrape the bottom of the pan so the rice doesn’t stick or burn.
  6. Stir in the soya sauce, brown sugar and cashew nuts. Once the rice is coated in all the flavours, remove off the heat.
  7. Garnish with spring onions, coriander and sesame seeds and enjoy!
