Ingredients

  • 100g Quorn Roast Mini Fillets
  • 200g boiled bulgur
  • 1/2 avocado
  • 1 can kidney beans
  • Salad
  • Pickled red onions
  • Fresh coriander

For the Roast Beetroot Hummus

  • 1 pack of chickpeas
  • 2 garlic cloves
  • 3 cooked beets
  • 4 tablespoons olive oil
  • 1 tablespoon tahini
  • 1 teaspoon of cumin
  • Salt
  • Black pepper
  • 1 lemon

Method

  1. Make the hummus by blending chickpeas, garlic, beetroot, olive oil, tahini and cumin to a smooth spread. Seasoning with salt, pepper and lemon juice.
  2. Slice the Quorn Roast Mini Fillets into strips and add to your bowl along with bulgur wheat, beans, pickled red onion, sliced avocado and beetroot hummus.
  3. Finish with a sprinkle of fresh coriander.
