Quorn

Ingredients
- 2 Quorn Wild Garlic and Parsley Sausages, sliced
- 1 tbsp olive oil
- 1 small leek, finely sliced
- 2 cloves garlic, minced
- 150g quick cook farro
- 60g sundried tomatoes chopped
- 560ml vegetable stock
- 1 large handful of rocket leaves
Method
- Heat the oil in a pan and fry the leeks for 5 mins until softened
- Add in the garlic and Quorn Wild Garlic and Parsley Sausage slices and fry for another 2 minutes
- Then add in the farro and sundried tomatoes and fry for 30 seconds
- Stir in the stock and bring to the boil
- Reduce the heat to low, leave uncovered and simmer for 30-35 minutes until the farro is soft
- Switch off the heat and mix in the rocket before serving
