Ingredients
- 1 pack of Quorn Cheesy Nacho Nuggs
- 2 romaine lettuce hearts, chopped
- 1 large red onion, diced
- 250g baby tomatoes, halved
- 250g sweetcorn, drained weight
- 1 tin of black beans
- 1 large avocado, diced
- 50g of grated cheese
- Crushed tortilla chips (optional)
- Spring onion (optional)
- Fresh green chilli (optional)
For the dressing:
- 3 tbsp sour cream
- 2 tbsp light mayonnaise
- A handful of fresh coriander
- Juice of a lime
- 2 garlic cloves
- 1 fresh green chilli (deseeded)
- 1 tbsp olive oil
- Salt and pepper
Method
- Cook the Quorn Cheesy Nacho Nuggs according to pack instructions. Let them cool, then cut into thirds.
- In a blender/food processor, combine all the dressing ingredients. Blend until smooth. Taste & adjust as necessary. At this stage you can also fry the sweetcorn in a little oil if you prefer, you can also eat it straight from the tin.
- Assemble everything together for the salad, drizzle over the dressing, sprinkle with grated cheese and finish with the optional crushed tortilla chips, spring onion and green chilli. Season to taste with salt & pepper.
