What is your role/background at Quorn?
As Head of R&D, my role involves setting up, managing and implementing our medium to long term research. Although we make a range of products that are designed to eat like meat, they do not contain any meat. Therefore we not only need a basic understanding of our unique raw ingredient (mycoprotein), but we also need to know how the mycoprotein interacts with all the other materials that we use within the Quorn products. In addition, we need to keep monitoring and reviewing how the processes that we use within the factory affect the performance of the mycoprotein and the other materials that we employ in developing and manufacturing the Quorn products. Of course, we also need to keep an eye on the costs of our raw materials and be able to respond very quickly to changes in raw material specifications, changes in legislation and know what impact these have on the products, ability to respond to pressure groups with the right information, etc.
What are your responsibilities?
I am responsible for a team of technologists. I also support procurement from a technical point of view and have some responsibility for our internal sensory research and development. I am also responsible for scouting and horizon scanning of new ingredients and new processes that can be employed at Quorn.
What do you like most about working for Quorn?
I like the variety; my job has grown and metamorphosed over the years. I like R&D; it’s great to start be able to start with a hypothesis and then use the acquisition of data and facts to confirm or disprove these hypotheses.
What makes Quorn a great place to work?
Great people, no airs and graces and the ability of everybody to muck in and pull together when we have significant things to deal with. I also like the fact that we are able to push the boundaries all the time in developing great tasting products, using state-of-the-art product development techniques and processes.
